The original Kadeau restaurant was founded in 2007 in a small island in the Baltic Sea, just off the coast of Sweden, Bornholm, by childhood friends Nicolai Nørregaard and Rasmus Kofoed, with Nicolai overseeing the kitchen and Rasmus focused on service and wine. Magnus Kofoed has also been working at Kadeau since the very first days, starting as restaurant manager and appointed to the position of CEO in 2018. In 2022, long term head chef Kyumin Hahn also became part of the upper management of the restaurant as a partner. With a dedicated kitchen garden nearby and access to forests, beaches and wild fields, Nicolai Nørregaard began to shape a cuisine with local terroir as the main focus. Kadeau Bornholm still remains the only restaurant on Bornholm with a Michelin star and a Michelin green star.
Kadeau Copenhagen was founded in 2011 and is now located in the old Christianshavn area of the city. With two distinct seasons throughout the year, the kitchen showcases the best produce and food traditions of Bornholm with a clear focus on foraging and preservation. It has successfully retained two Michelin stars since 2018, as well as a Michelin green star since 2023. Today, Kadeau is open on Bornholm during the summer months, and in Copenhagen all year round.
The preservation of ingredients is the backbone of the kitchen at Kadeau. From the start of spring to the end of Autumn, the team is out foraging from wilds on Bornholm and picking in the garden. Every year on Bornholm they preserve between 9 and 11 tons of food using up to 50 different methods. The depth and variety of preserved products in the kitchen’s repertoire is what makes Kadeau stand out and has been its contribution to the New Nordic Food movement.
During the Growing Season in the spring and summer, fresh produce arrives from the garden and wilderness of Bornholm. At this time, the menu reflects the seasons on the island with native herbs and flowers, fruits and vegetables and other ingredients hand-picked by the team. During the Preservation Season in the darker months, the chefs delve into the rich larder which was prepared throughout the summer.
Another key aspect of Bornholm’s cuisine that has become a cornerstone of the Kadeau kitchen are the smokehouses on the island. His uncle was the only smoker who was still smoking fish in the traditional way on Bornholm. Nicolai spent much of his time with his uncle, learning the importance of tradition and patience. The smokehouses mark the island’s landscape with their large and beautiful chimneys; however most of them now are no longer in use. In a world where most kitchens are modernising, the tradition of smoking and preserving in the old ways is something that keeps Kadeau rooted in an ethos of sustainable and real cooking.
